Here is a very fast and flavorful side-dish that I learned from my mother. There’s quite a lot of ground coriander in this recipe, but the combination of flavors works very well.
This dish takes about 15 minutes to prepare from start to finish, including prep-time.
Here is what you’ll need:
- 1/4 cup olive oil
- 24 oz. white mushrooms (or a large container), sliced
- 1 tsp. ground coriander
- 1/2 tsp. paprika
- 2 cloves garlic, chopped
- 1 tbsp. lemon
- 1/3 bunch of cilantro sprigs (a good handful), roughly chopped
- Salt to taste and a few rounds of fresh black pepper
In a large frying pan, heat the oil over high heat. Sauté the mushrooms for about 7 minutes, or until they brown. Stir every now and then. Add the garlic, ground coriander, and paprika, and cook for a further 2 minutes. Turn off the heat.
Add the rest of the ingredients and mix well. Eat while it’s hot!
