Potato salad with herbs and olive-oil

imageThis is a healthy Mediterranean version of potato salad, with plenty of herbs and no mayonnaise. My mother makes a version of this that I grew up eating. I add sambal oelek to her version to add a spicy kick. It makes a wonderful summer side dish served with a piece of grilled protein.

Here is what you’ll need:

  • 24 oz. small, round potatoes such as Honey Gold, halved
  • 1/3 cup of mint, chopped
  • 3/4 cup of parsley, chopped
  • 1 bunch green onion, both white and green parts, thinly sliced
  • 2 cloves garlic, crushed
  • Juice of half a lemon
  • 1/3 cup olive oil
  • 2 tbsp. sambal oelek
  • 1/2 tsp. salt and pepper

imageWash the potatoes and cut in half. Placed the potatoes in a large pot of water and bring to a boil. Cook potatoes until tender but still firm, about 15 minutes. Check the potatoes periodically to make sure they do not over-cook and start to fall apart. Once tender, drain the water and set potatoes aside.

Meanwhile, Add the mint, parsley, green onion, garlic, sambal oelek, lemon, salt and pepper, olive oil and the potatoes to a large bowl. Mix together and serve!
