
Leftover chicken sandwich with yogurt, mayonnaise, lemon and garlic spread
If you have left over chicken, you must try this sandwich! You can use pita bread or any type of bread you like, as long as you put a big dollop of this garlicky yogurt spread inside. It’s super easy to put everything together, about 10 minutes, and it’s enough for 4-5 sandwiches. If I have left-over chicken, I usually have all the rest of the ingredients needed at home to make this.
When I make one of my signature sandwiches, I love to stuff them with loads of herbs and vegetables and only a little bit of protein. My favorites are green onions, tomatoes, green pepper and cilantro in my sandwich. Sometimes I add other greens like watercress or arugula because I adore their peppery bitterness.
I used to go to a Lebanese deli near my old office in Redmond, WA. They made this super garlicky chicken sandwich that I absolutely loved and would order frequently. I deconstructed the sauce in the sandwich and came up with this. I think it’s pretty close.
Here is what you’ll need:
- 1/2 cup of Greek Yogurt
- 4 tbsp. mayonnaise
- 4 cloves garlic, crushed
- 1 tsp. crushed red pepper or paprika
- 1 1/2 tbsp. lemon juice
- pinch of salt
- left over cooked chicken, sliced or shredded
and make it even better adder-ons:
- tomato
- green pepper
- green onion
- cilantro
- watercress
- arugula
In a bowl, combine all the ingredients above the chicken. Mix well. Put your sandwich together. Put a big generous dollop of the yogurt sauce in the sandwich, and spread evenly. Stuff the sandwich with chicken and any or all of the adder-ons and enjoy!
