
Spicy Roasted Harissa Chicken Thighs
I love my tube of harissa paste. It’s gone into stews, roast potatoes, pasta sauces, even eggs. I especially love harissa in this chicken recipe. I made it for my family once, and my husband and I thought it was amazing. My children, on the other hand, couldn’t take the spiciness despite the training I’ve been giving them! I made these spicy chicken thighs with a cheesy cauliflower mash.
It’s so fast and easy to put this recipe together. Prep-time is 5 minutes and cooking time is 30-40 minutes.
Here is what you’ll need:
- 4 chicken thighs
- 1 tbsp. Dijon mustard
- 1 tbsp. hot sauce (such as Tabasco)
- 1 tbsp. harissa paste
- 4 cloves garlic, crushed
- 1/4 cup olive oil
- 1/2 tsp. herbs de Provence
- 1/2 tsp. salt and few rounds of fresh black pepper
Here is how to put this together:
Heat the oven to 400° F (200º C).
In a large bowl, place the chicken and the rest of the ingredients together and mix well.
Roast for 30-40 minutes, until internal juices run clear. Serve with my cheesy cauliflower mash.
