Cinnamon Salmon With Sweet Potatoes and Onions

My mother in-law made me a salmon with caramelized onions dish seasoned with cinnamon and brown sugar. I originally thought it was a strange combo…..until I tried it.  I instantly loved it and just knew it would be a dish I’d be making again and again. I started adding sweet potatoes with the salmon and onions and it turned out being such a good accompaniment.

It takes about 10 minutes prep-time and 30 minutes cooking time. The kids love this dish, and I don’t have to prompt them to finish everything! I often stew some greens with garlic and olive oil or serve brussels sprouts alongside.

Here is what you’ll need:

  • 1/4 cup of olive oil
  • 1 large onion cut lengthwise and thinly sliced
  • 2 sweet potatoes, cut in half and sliced 3/4 inch
  • 1/2 tsp. cinnamon and additional 1/4 tsp. for salmon
  • 1 tbsp. brown sugar and additional 1/2 tbsp. for salmon
  • 1/2 tsp. paprika and additional 1/4 tsp. for salmon
  • 1/2 tsp. salt and pepper and additional pinch of both for salmon
  • 1 and 1/2 cups chicken stock
  • 3-4 pieces of salmon

In a braiser pan, add olive oil and heat on medium high. Add the onions and saute for 5 minutes, or until they are soft and just starting to turn brown. Next, add the sweet potatoes to the pan and sprinkle with the cinnamon, brown sugar, paprika, salt and pepper. Stir to mix throughout. Cook until the sweet potatoes’ edges are starting to brown, but not fully cooked through, about 10 minutes. Make sure to stir occasionally so that all the sides cook evenly.

While the above are cooking, prepare the salmon. Sprinkle with cinnamon, brown sugar, paprika, salt and pepper.

Add chicken stock to the sweet potatoes and stir to scrape all the stuck bits from the bottom of the pan. Bring to a simmer, cover and cook sweet potatoes for a further 5 minutes until they are almost cooked through. Next, nestle the salmon pieces into the braiser skin-side down, cover, and lower the heat to medium-low. The liquid will not cover the salmon and sweet potatoes completely. Don’t worry, it will cook through. Cover and cook for about 10 minutes and serve.
